Growing up in Hong Kong, I got to experience a lot of different foods. One of my favourites, was Singapore Noodles. I am going to share with you guys the recipe my mum uses when she makes this dish!
What You Will Need :
2 Red Peppers
1 Can of baby corn
2 cloves of garlic (or substitute for equal amount of minced)
2 cups of shrimp
2 tsp tomato paste
4 tsp curry powder
1/4 tsp turmeric
1/4 tsp white pepper (or what you have)
240 grams of rice vermicelli noodles
salt and chilli to taste
To start, bring a large pot of water to a boil. Turn off heat and put vermicelli in. Stirring occasionally to loosen.
Heat a non stick frying pan on medium-high heat then add peppers and corn and stir until softened.
Add green onions, stir and then add the garlic.
Add the tomato paste and all the spices, continuing to stir for another minute till well mixed.
Then add the shrimp, cooking for another 2 minutes till shrimp softens.
Drain the noodles and return back to the pot. Pour the veggie stir fry into the pot and stir through until everything is well mixed.
Serve Hot and Enjoy!
